I've been wanting to take this time to propel myself to L'Auberge d'Antan for a long time ...
And then after a few years, after having met Yannick just before our respective installations... and then Laurent, a jury by my side during the culinary contest "Mirepoix met le couvert", I made myself a self-gift for Mother's Day: we will go to St Girons to taste this grandmother's cooking 😁.
How? Yannick and Laurent are grandmothers ??? ...
But nooo ... but still bearded cooks (if you have read my other gourmet posts you will understand) ... tatoos ... Yannick and Laurent ... marmules ... gaillards as they say in our country.
But with an approach to cooking as generous as a mother's, a choice of bottles as smart as a father's... for precious moments...
And yes, at L'Auberge d'Antan we scratch your childish soul ... and if you have never lived in such a beautiful barn, it could well resemble the one you dreamed of, big tables, nooks and crannies to hide in, time suspended like the hams in the attic ...
At the Auberge d'Antan, your eyes sparkle ... like at Christmas ... there are lots of memories ... and thinking back to Christmas I would have made myself a present for Mother's Day ... by stealing the steering wheel slicer ... !!!
That said, when you take up the context of Yannick and Laurent's Viking heads, you quickly forget ... On the other hand, you say to yourself, ok ... there's equipment ... besides, at the Auberge d' Antan, it seems that the meat is left to mature, just like the matured cheeses from the Couserans ... it's so good to be there...
Here too, children have their place ... we sharpen their taste buds with selected salted meats ... duck confit "the best I've ever eaten Mum" ... now you look like you haven't heard ... you shouldn't exaggerate either ... but if you really listen to your child, you tell yourself he's a little right ... a little ... 😉.
In this charming restaurant, lost in Ariege (and yes, when you come from Lyon, or Marseille... St Girons is a lost corner... even when you come from Foix 😋 ) it transpires authenticity, heart values... and I even think that with friends you can get drunk too...
At L'Auberge d'Antan, we enjoyed this special Mother's Day menu: scampi cooked to perfection... (Yannick has plans for Sète... I bet the steering wheel slicer 😉 ), a creamy risotto and melting asparagus, pink veal as it should be, morels and potatoes, a board of Couserans cheeses, and, to finish, a Strawberry-Chocolate dessert... what else ?
A very nice wine list... and a particularly naughty St Joseph.
Go ahead with your eyes closed...
The menu of "canaille" dishes ... the garbure ... the millas will ensure our return soon to the home of these two friends who provide a gourmet haven of peace for the souls of big children.
